SHINJI by Kanesaka (Carlton Hotel)~ Shinji by Kanesaka is an extension of 1 Michelin star Chef Shinji Kanesaka sushi restaurant in Tokyo. Chef Kanesaka brought an authentic japanese fine dining experience to the shores of Singapore. I always wanted to try an omakase menu but never had a chance. I like the idea to leave to the expert japanese chef to decide what’s good for us and we just sit back and enjoy. So excited especially we heard so many good reviews on Shinji!
Located at Carlton Hotel. It is near the City Hall mrt. The interior is intimate with elegance. Their organic materials like wood and paper are flown in from Japan and use for the restaurant’s furnishing and fixtures. The main sushi counter was actually singularly carved from the trunk of a 220-year-old Japanese cypress or hinoki tree. Wow 220 year! Amazing!
Awesome! We have a dedicated chef to ourselves. The service staff is very attentive and helps me with little Travis baby chair. The chef explained every dish and taught us how to enjoy the dish. Thank goodness that Little Travis was still quite well behaved. Hopefully we didn’t disturb other customers. At the end, the chefs even wore cute hats and sing Birthday song to us! Glad that Travis is there to enjoy with us!
We ordered the 和 | Omakase Wa (S$300) set. First time see the chef prepare wasabi infront of us using the real fresh wasabi root. The wasabi from wasabi root have hints of sweetness with spicy after taste. However, do use the wasabi sparingly as you won’t want it to overpower the freshness from sashimi.
The appetizers were so delicately presented. Look so pretty. The flavours were well balanced and get our appetite up and ready.
The sashimi is so fresh. My favourite is the Uni! Slowly savour 1 uni at a time! Awwww…it is so fresh and delicious. Bursting with flavours.
The cooked dishes were so beautifully presented. The chef is so attentive to every single detail.
First time following the traditional way of eating Nirgiri Sushi with our hands. It gives a different feel to it. You can feel the texture of the sushi too. This is the first time I really enjoy Tuna! We usually love salmon. Today is really a big change of opinion. The tuna belly is so rich and flavourful. Remind of me eating well marbled wagyu beef. Again my favourite is the Uni Sushi! My goodness! It is literally like fireworks in my mouth!
I always love a wonderful ending to a meal. Aww the Honeydew! Now I can finally savour the premium luxurious japanese fruit! The Honeydew is so sweet and soft. It literally just melt into my mouth as I gently take every bite. The matcha ice cream is creamy and smooth. The sea salt ice cream is refreshing.

We enjoyed all our dishes. We tried the 和 | Omakase Wa (S$300). The most memorable were the mouth-watering tuna belly sushi, uni sushi and honey dew dessert.
