Recipe: Roast Pork

Shopping List (For reference)

Ingredients (For 4 - 6 persons)
  • Pork Belly
  • 1 Tbsp x Rice Wine (optional)
  • 1 Tsp x Salt
  • 1 Tsp x Five-spice powder
  • 1 Tsp x Sugar
  • 2 cloves x Garlic (cut to slices)
  • 2 Tbsp x Coarse Sea Salt
  • 1 Tbsp x Vinegar
Cooking Steps

Step 1: Wash the pork and use tweezer to pull out the hair (if any)

Step 2: PREHEAT the oven at 180 degrees
Step 3: Put the pork (meat facing up) into the oven

Step 4: Roast till the skin is translucent (approximately 15 minutes)

Step 5: Poke the pork skin using fork as many as possible

Step 6: Slit the meat (approximately 0.5 inch deep)
Note: The slit should be 1 inch apart from each other. You can put the garlic slices deep inside the slits

Step 7: Marinate the pork belly (excluding the skin) with the rice wine, salt, five-spice powder and sugar

Step 8: Wrap up the pork belly using aluminium foil around the side and bottom (Expose the skin)

Step 9: Wipe the skin clean and dry using paper towel

Step 10: Brush the skin with vinegar

Step 11: Keep the pork belly in the fridge overnight

Step 12: Remove the pork belly from the fridge. By now, the skin should be dry.

Step 13: Mix coarse sea salt with a few drips of water and put the mixture on to the pork belly skin.

Step 14: Roast the pork belly (lower rack) for 1 hour at 180 degrees. (Add some water in the tray)

Note: Ensure that there is always water in the tray.

Step 15: Discard the salt crust and aluminium foil.

Step 16: Poke the skin with fork as many as possible, wipe the skin clean dry and brush the skin with vinegar

Step 17: Roast the pork belly (upper rack) till the skin is crispy at 220 degrees.

Step 18: Scrape the burnt parts off the skin with knife

Step 19: Let the meat cool down (approximately 15-20 minutes) before cutting to serve

Step 20: Ready for delicious meal

This is my first time I am sharing my mum recipe! She has been cooking for many many years. My mum is always a creative good cook and always attempt new dishes. She also got strong persistence to try till it tastes right for us. This is the latest recipe for her home made roast pork.
