Recipe: Chicken Pork Ribs Soup with Carrot and Potatoes

Shopping List (For reference)

Ingredients (For 2 - 4 persons)
  • 2 x Chicken Drumstick
  • 250g x Pork Ribs
  • 1 x Sweet Corn - Prefered the Bi-Color Sweet Corn
  • 2 Medium Size Potato - Cut into chunky pieces
  • 2 Medium Size Carrot - Cut into chunky pieces
  • Coriander Leaves - Optional as a garnish
  • 50g x Dried anchovies/ikan bilis (Head and internal parts removed)
  • 3 x small dried scallops

Cooking Steps
1. Boil Water in a Kettle
2. Blanch all the Chicken and Pork Ribs with hot boiling water in a big pot
3. Pour away the Water and keep the Chicken and Pork Ribs
4. Boil Ikan bilis, sweet corn and pork ribs for 10 minutes
5. Add carrot, potato and scallops and continue to boil for 10 minutes
6. Finally add the Chicken and boil for 15 minutes
7. Garnish with the Coriander leaves
8. Season with salt (optional)
9. Ready for a delicious meal

This is usually my simple dish for a Sunday Lunch! I always enjoy this soup! It is so flavourful! Simple meal for 2 pax and don't need to cook other dishes.
