Forest 森. Local Celebrity Chef Sam Leong and Chef Mike Tan has inspired their chinese cuisine including their service and presentation with a western approach. Forest's kitchen has also featured an an unobstructed view of their chefs at work. I have heard many mixed reviews on Forest. The dishes definitely come with a price. I was lucky to manage to book them when they add more seats for Restaurant Week. It was kinda of confusing to locate the car park closest to Equarius hotel as resort world sentosa has a huge carpark. You won't want to park at the wrong part of the car park or you will have to walk a long distance to get there.
It is decorated just like how they have name it. Forest. There are artificial tree and greenery everywhere. They have created a strong greenery theme right when you step into the hotel and view the artificial display of waterfall at the lobby to the artificial trees in the restaurant. An unique experience that customers get from the moment they step into the hotel lobby to the restaurant. However, I think maybe if there are more natural than artificial decorations, it will bring the theme to the next level. forest_ambience forest_ceiling
I have notified the service staff that it is a birthday celebration and they do offer a complimentary slice of cake. However, we had quite a few people so I decided to order a cake from them as they don't allow me to bring cake from outside. They were swift in replying to my emails when I was trying to order the cake. Their service is also swift and friendly in serving and ordering. However, I still feel they seem a bit not very experienced for such a fine dining restaurant. I guess when you pay for such an expensive meal at a fine dining restaurant, the expectation is much higher.

A complimentary dish from the chef. Juicy cherry tomato placed in a little red spoon. Perhaps a different color spoon will enhance the presentation.

2 Deep-Fried Prawn (Wasabi Dressing & Butter Lemon Dressing). They are crunchy and refreshing. I thought they should have ensure the little leaf was used as a topping on the butter lemon dressing to be at the right angle. It seems to have flip the wrong side.

Wok-Fried Cubes of Beef Tenderloin in Black Pepper Sauce accompanied with Pan-seared Foie Gras. The beef cubes are JUICY! The sinful Foie Gras is also very fragrant. Well Done! The color of the dish look a bit too dark though.
~Wok-Fried Japanese Pearl Rice~ forest_squid_ink_rice_scallop
Wok-Fried Japanese Pearl Rice with Squid Ink in XO Chilli Sauce accompanied with Seared Hokkaido Scallop. Wow a Big Scallop resting on the black rice! Lovely Presentation. The dish give a different layers of texture. From the crispy rice, squid ink rice to the pan seared scallop! The scallop is also big and fresh. A beautiful dish with great taste!

Chilled Coconut Jello with Aloe Vera, Sea Coconut and Popping Candy. Highlight of the dinner! It outshine all the other dishes and win all the comments. A dinner that end off with a perfect dessert always bring a perfect dining experience. They have presented the dessert in a coconut. It is a refreshing dessert. The popping candy give a fun touch to the dessert bring back the childhood memories as well.

We had to order the birthday cake from them as they don't allow me to bring my own cake. The cake quite nice but not worth it for the price. I feel they should offer discount of the cake to diners of the restaurant as we are not allowed to bring cake from outside.
